Abstract
The effects of various conditions of temperature, oxygen availability and dry matter (DM) content on protein changes in an alfalfa-grass mixture were measured by N insolubility in an acid-detergent solution (ADIN), capacity to bind an acid dye (DBC) and free alpha-amino-N content (AAN) with and without incubation with pepsin and pancreatin. The ADIN concentrations were similar from 25 to 59% DM. The ADIN in haylage stored at 70 C was greater than that stored at 30 to 55 C. Aeration produced an increase in ADIN at 38 and 55 C, but not at 70 C. The DBC was not changed by aeration when stored at 70 or 55 C, but increased as air exposure increased at 38 C. Alpha-amino-nitrogen content decreased with both increasing temperature and aeration. Amino acid release by protease was least for the forage ensiled at 70 C and greatest for that ensiled at 38 C (P<.01) and decreased slightly as extent of aeration increased. These results indicate that the products formed under different conditions vary in amount and kind and may lead to differences in feeding value.
