Abstract
Fifty-six steers were measured for urea space at 12 min (US12) and 15 min (US15) after injection and 12th rib ultrasonic measurement of fat thickness (ULTR). After slaughter, carcasses were measured for 12th rib fat thickness (CRF), percentage cutability (PCUT) was calculated from the USDA formula and percentage ether extract (PCEE) was calculated from carcass specific gravity. Among the diverse breed and diet groups represented, ULTR was most highly correlated with PCEE and PCUT. However, within groups, US12 and US15 were more highly correlated with PCEE and PCUT than was ULTR. Path analysis was used to partition within-group correlations adjusted for weight. This partitioning showed US12 and US15 to be more highly correlated with lean-fat composition than any of the other measurements. ULTR was at least as highly correlated with lean-fat composition as was CRF. In an additional trial, the ranking of animals with respect to ULTR remained fairly consistent during a 70-d feeding period.
