Toxic and Essential Elements in Bone – a Review

Abstract

The concentration of arsenic, mercury, cadmium, lead, selenium, flourine, calcium, phosphorus, magnesium, zinc, copper, iron and manganese in bone of cattle, sheep, swine and chickens is presented. In addition, weight of the animals, bone state and type and dietary concentrations of the above elements in relation to the concentration in the product are supplied where possible. Contamination of mechanically deboned meat with toxic elements from bone is discussed.
