Northeast Section ADSA-ASAS Young Scientist Award, 1978

Abstract

H. Russell Cross, Research Food Technologist at the USDA Meat Science Research Laboratory, was the recipient of the 1978 Young Scientist Award sponsored by the Northeast Division ADSA and Northeast Section AS AS. He was born in Dade City, Florida, on February 11, 1944. He received a B.S. in Animal Science in 1966 and a M.S. in Meat Science in 1969 from the University of Florida. In 1972 he received a Ph.D. in Meat Science with minors in Biochemistry and Statistics from Texas A&M University. His dissertation focused on the separation, partial characterization and role of collagen and elastin in bovine muscle tenderness.

His work experience includes that of a Meat Grader (USDA, 1966–67), a Livestock and Meat Specialist (USDA, 1972-73) and his present position as a Research Food Technologist (USDA, 1973-present). In less than 5 years with the Meat Science Research Laboratory, Dr. Cross has been intimately involved in a large number of studies to provide the Agricultural Marketing Service, USDA, with data for re-evaluation of present and development of new standards for grades.
