Abstract
The literature pertaining to the relationship between carcass density and bovine carcass fatness is reviewed. Carcass density is a low cost method of determining the fatness of beef carcasses, but the accuracy of the prediction equations have not yet been quantified. The possibility of carcass density being independent of carcass weight, breed and sex has not been fully investigated. Weighing carcasses in water could be carried out for research purposes, but would have little application for commercial evaluation of carcass fatness. If density can be shown to be a satisfactory method of determining carcass fatness, alternative methods of measuring it will need to be developed.
