Abstract
Actual retail yields of 590 steer and 240 heifer carcasses were compared to their predicted yields as determined by the present U.S.D.A. yield grade equation. The carcasses were of the Prime, Choice and Good quality grades. Actual yields of steer and heifer carcasses exceeded the predicted retail yields by 1.91 and 1.15%, respectively. Retail yields of steer carcasses exceeded that of heifer carcasses by .76%. When carcasses were grouped into low, average and high cutability groups the predicted retail yields of low cutability carcasses exceeded the actual retail yields for steer carcasses by 1.20% and for heifer carcasses by 1.59%. For average and high cutability groups the predicted retail yields were less than the actual retail yields for steers by 1.23 and 3.49% and .86 and 2.99% for heifers, respectively. Prediction equations for percent retail cuts of the primal cuts and total retail cuts were computed for steer and heifer carcasses, respectively. These equations are less biased for the Prime, Choice and Good grades and steer and heifer classes than the U.S.D.A. equation.
