Abstract
Because of the fundamental nature of the neuromuscular interaction in both rapid physiological and long term metabolic regulation of the myofiber, the nervous system is involved in many aspects of meat production. From protein synthesis to meat quality it would be unwise to overlook the regulatory effects due to the nervous system.
