Abstract
Forty female porcine carcasses of unknown background, were selected on the slaughter line in a commercial packing plant by physical appearance of ovaries, to fit five treatment stages.
No significant differences were noted in water holding capacity, cooking losses, myoglobin, sodium or potassium content, or in subjective color, firmness or marbling scores of longissimus muscle samples. Apparently, whether loins are from pre-pubertal gilts or from females in an early luteal, luteal, follicular, or pregnant phase had little relation to quality factors studied.
