Abstract
A mechanism for extracting cores of muscle tissue from live cattle is described. The longissimus and semitendinosus muscles were both successfully sampled. With proper technique uniform cores can be extracted at the rate of one every 3 min., or less, without excessive stress to the animal or danger to the operator. Applying a container with liquid nitrogen for 20 to 25 seconds to the area where the incision is to be made was effective in anesthetizing the skin and the incision could be made and the biopsy obtained with little apparent discomfort to the animal.
