Abstract
Gross chemical analysis of 48 carcasses and the whole empty bodies of beef steers provided the data to calculate linear regression equations relating chemical composition of the carcass to composition of the whole empty body. Density of carcass was also related to composition and energy content of the carcass and the empty body.
Correlation coefficients between carcass and empty body parameters were 0.99 or above for weight, percent water and fat, and energy kcal./gm. of tissue. Similar values for percent ash and nitrogen were 0.96.
Carcass density was highly significantly correlated with the various chemical constituents of the carcass and the empty body. Correlation coefficients between carcass density and the chemical constituents of the empty body were –.96, 0.93, 0.92 and –.95 for percent fat, water and nitrogen, and energy, kcal./gm., respectively.
Ether extracted fat was found to have a caloric value of 9.385 kcal./gm. and the dry fat-free organic matter (protein) a caloric value of 5.539 kcal./gm. Nitrogen content of dry fat-free organic matter was 16.33%.
