Relationship of Various Linear Measurements and Percent Yield of Trimmed Cuts of Beef Carcasses

Abstract

Various linear measurements were evaluated as predictors of percent closely trimmed wholesale cuts. Without the effects of carcass weight removed, negative correlations of low magnitude or essentially zero were obtained. Partial correlation analysis, holding carcass weight constant, improved the magnitude of correlations. The linear measurements were adjusted by dividing them by hundredweight of carcass. These adjusted measurements accounted for 40.1 to 45.4% of the variation in percent closely trimmed wholesale cuts.

Multiple regression analysis yielded a multiple correlation of 0.82 between percent closely trimmed wholesale cuts and a combination of carcass weight, forearm and round circumference and loin and rump length.
