Comparisons of Longissimus Dorsi Area of Genetically Similar Barrows and Gilts1

Abstract

Data on the longissimus dorsi area at 15 positions have been observed and correlated with the edible portion weight of hams and loins of genetically similar barrows and gilts. The mean longissimus dorsi area at five locations and the weight of edible portion in hams were significantly greater in gilts than barrows. Gilt data were generally less variable than that of barrows. Correlation coefficients between longissimus dorsi area and the weight of loin edible portion were much lower for gilts than for barrows.
