Water, Phosphorus, Calcium, Ash and Protein of the Heart, Liver and Muscle of Hereford, Brahman and Hereford-Brahman Cross-Bred Cattle1,2,

Abstract

Water by the oven and toluene distillation procedures, phosphorus, calcium, ash and protein have been determined in the heart ventricle, gracilis muscle and liver of Brahman, Hereford and first cross Brahman-Hereford cattle. The liver had less water present by toluene distillation than by the oven procedure. The Hereford cattle had more phosphorus in the liver and less calcium in the liver and heart. The Brahman cattle had more ash in the liver and heart. Breed had no significant effect on the amount of protein in the heart, liver or gracilis muscle.
