Abstract
An analysis of the side to side variation in the physical separations and measurements of 42 swine carcasses indicated that specific gravities of the carcass and the ham, and linear measurements of backfat and length could be accurately taken from one side of the carcass. Cross sectional tracings at eight points indicated that area measurements of fat and of lean were more accurately obtained in the mid region of the carcass compared with either extremity. Division of the ham from the carcass and subsequent separation into fat, lean, and bone was more accurate than was division and separation of the middle and shoulder. The errors in measurement and separation are reported and discussed.
