Finish in beef cattle from the standpoint of the consumer

Abstract

It is a pleasure for me, a representative of the packing industry, to meet with you, representatives from various colleges and universities of the United States, to discuss briefly one of the many, many phases of the live stock industry in which we are all vitally interested. I am sure we can all profit by discussing and hearing the viewpoints of the different parts of this business so vital to human well-being.

Cattle are one of the chief sources of food for this great nation of ours, as well as most other nations. Consumers, to a large degree, control or determine (indirectly) trends in production and preparation for the market.

One of the many phases of production and preparation of cattle is the finish in the beef. I shall attempt to discuss this subject from the consumer's viewpoint.

Fortunately all of us do not have the same tastes. It is this variation, sometimes as to locality, sometimes as to nationality, that makes business what it is.
