Retail Cutting Records of Yearling Cattle

Abstract

The cattle included in Table I were Michigan-bred grade Hereford cattle, placed on feed at about seven months of age and liberally fed for 61/2 months, during each of three years. They were slaughtered at a local abattoir during the month following the close of the feeding test. The fatter cattle, equally divided for sex, were slaughtered first.

Retail cutting records were obtained in local markets, an equal number of steers and heifers being cut by each man the first year, and during the last two years one man did all of the cutting. Records were obtained by members of the department.
