The Effect of Ingesting Soybeans and Oils Differing Widely in Their Iodine Numbers upon the Firmness of Beef Fat1

Abstract

Increasing quantities of soybeans are being incorporated in corn belt rations commonly fed to beef and dairy cattle and, from all outward manifestations, with good results. In recent years, however, certain cattle buyers operating in Iowa have been objecting to beef cattle which have been fed liberal amounts of whole soybeans, contending that they kill out off-colored carcasses and are softer than desired by the trade. Forewarning as the cattle buyers' complaints seem to be and realizing fully the softening effect of feeding large allowances of soybeans to hogs and the penalties which have been imposed upon hog producers for marketing soft hogs, numerous cattle feeders are now asking whether the firmness of beef is similarly deleteriously influenced by feeding large allowances of soybeans.
