Histological Investigations of Meat

Abstract

In this brief report there is space only for mention of the most important and promising aspects of the histological investigations which are being carried on by the Department at its Beltsville laboratory.

  1. There is the routine work of preparing slides from samples taken from the 8th rib of each animal or part of animal which is sent in for analysis. These samples are taken in triplicate. One is fixed in Jenker's solution, one in alcohol and one in formalin. The latter is used at a later time in making measurements of the size of individual fibers. Considerable labor is involved in the handling of all this material but it seems to be the only method whereby a sample of each animal can be prepared for both present study and future reference purposes. Thus we have for each animal either a permanent, stained preparation or embedded samples from which permanent preparations can be made at will. This constitutes our record to which we can turn at any future time as the occasion arises.
