The Organization and Teaching of a Meat Course

Abstract

The meat course is one of the most important courses in either the Animal Husbandry or Home Economics courses. Meat is one of our most important food products and is the ultimate object of all the breeding and feeding work with food animals, and enters into the great majority of our packinghouse operations.

Outline of a Meat Course

I have outlined below twelve reasons why the meat course is important:

  1. To teach students how to select and kill meat animals on the farm.
  2. To teach them how to cut and cure meat on the farm.
  3. To help the student to become a better judge of livestock by learning what is under the hide.
  4. To teach him how to select and judge meat and meat products.
  5. To teach the various methods of preparing the different meat products which can be prepared on the farm.
  6. To impress upon the student the actual value of type, form, and quality in meat animals.
