Creatinine Excretion and Specific Gravity as Related to the Composition of the 9, 10, 11th Rib Cut of Hereford Steers

Abstract

Creatinine excretion and the separable lean content of the 9, 10, 11th rib cut of 18 Hereford steers have been determined. The creatinine excretion per unit of body weight was significantly correlated with the percent separable lean in the soft tissue of the sample (r=0.67). It was found that while there appeared to be little correlation between these two measures within carcass grades, the correlation between grades was good.

The separable fat of the rib sample can be predicted accurately from the specific gravity of the whole sample by use of the equation

where F is the proportion of separable fat in the rib cut and G,y is the specific gravity of the whole cut.
