Moisture, Ash, and Fat Content of Connective Tissue from Cattle of Different Ages1

Abstract

Elastin and collagenic connective tissues from differently aged cattle were analyzed for moisture, ash, and fat content. The data were treated statistically and it was found that the moisture and ash content of connective tissue decreases in cattle as the animal becomes older. On the other hand, the fat content of connective tissue was found to increase with age of the animals. The moisture and ash content of the collagenic connective tissue is significantly higher than that of the elastin connective tissue.
